Elucidation of Response Mechanism of a Potentiometric Sweetness Sensor with a Lipid/Polymer Membrane for Uncharged Sweeteners

چکیده

Nowadays, the utilization of a taste sensor with lipid/polymer membranes is one most accurate and objective ways to evaluate tastes solutions. However, it has been difficult uncharged sweet substances, such as sucrose, because conventional uses potentiometric measurement, which mainly based on changes in surface electric charge density membrane. Previous studies have reported that sweetness called GL1 can sugars sugar alcohols, commercially available for food, beverage, pharmaceutical industries. response mechanism not fully elucidated. In this study, we focus clarifying effect concentrations types metal ions conditioning solution GL1. Moreover, according different solutions, complex formation hydrated radius were considered influence membrane potential measured reference responses. The purpose study elucidate improve selectivity sensitivity sensor.
